Grilled Chicken with Pineapple Salsa
Ingredients:
Chicken breasts: 2
Olive oil: 2 tbsp
Salt: To taste
Black pepper: To taste
Fresh cilantro (chopped): For garnish
Lime wedges: For serving
Pineapple (diced): 1 cup
Red bell pepper (diced): 1
Red onion (finely chopped): 1/2
Jalapeño (finely chopped, seeds removed): 1
Fresh cilantro (chopped): 2 tbsp
Lime juice: 2 tbsp
Salt: To taste
Steps:
Prepare the Pineapple Salsa: In a bowl, combine the diced pineapple, red bell pepper, finely chopped red onion, jalapeño, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavours meld.
Season the Chicken: Pat the chicken breasts dry with paper towels. Drizzle both sides with olive oil and season with salt and black pepper.
Grill the Chicken: Preheat the grill to medium-high heat. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice char marks. The internal temperature should reach 75°C (165°F).
Rest the Chicken: Remove the chicken from the grill and let it rest for a few minutes to retain its juices.
Plate the Dish: Place the grilled chicken breasts on a plate. Spoon the pineapple salsa beside the chicken.
Garnish and Serve: Garnish with fresh cilantro and serve with lime wedges on the side.
